Del Tufo red grapes from single varietal.
ON THE PALATE
Intense and pleasant in aroma with a slight hint of ripe fruit and wood due to the 18-month barrel aging.
When to Consume
The wine matures in wooden barrels before bottling and is suitable for long aging.
IDEAL PAIRED WITH
Local sliced meats, meat main courses, medium-aged but intense and richly flavored cheeses.
14 – 16° C.
Where possible, the vineyard is grassed in alternate rows with green manure legumes until June.
Harvesting is done by hand, selecting the bunches in mid/late September when the grapes are perfectly ripe.
Vinification is achieved by a gentle destemming with a soft pressing of the grapes.
Temperature-controlled red fermentation takes place with contact with the skins for at least 10 days.
Aged in steel tanks for 5 months and then in wooden barrels for 18 months.
