Where possible, the vineyard is covered with grass in alternate rows with green manure legumes until June.
The harvest is manual with selection of the bunches in mid / late September with perfectly ripe grapes.
The vinification is obtained through a delicate de-stemming with soft pressing of the berries.
The fermentation in red is separate for each of the 2 grape varieties from which it comes and is carried out at a controlled temperature.
The blend is then aged in steel tanks for 5 months.
