Wine with an intense and characteristic flavor, pleasantly fruity.
When to Consume
Right away, for a special occasion, or to keep in the cellar for a few years.
IDEAL PAIRED WITH
Appetizers, pasta dishes, soups, white meat, medium-aged cheeses.
14 – 16° C.
Where possible, the vineyard is grassed in alternate rows with green manure legumes until June.
Harvesting is done by hand in mid/late September when the grapes are perfectly ripe.
Vinification is achieved by a gentle destemming with a soft pressing of the berries.
Red fermentation is separate for each of the 2 grape varieties of which the wine is made, and it is carried out at a controlled temperature.
The blend is then aged in steel tanks for 5 months.
