Dry red wine

ON THE PALATE
Intense and structured, with hints of ripe fruit combined with slightly herbaceous notes.
When to Consume
The wine matures in wooden barrels before bottling and is suitable for long aging.
IDEAL PAIRED WITH
Meat main courses, medium-aged but intense and richly flavored cheeses.
14 – 16° C.
Where possible, the vineyard is grassed in alternate rows with green manure legumes until June.
Harvesting is done by hand in mid/late September when the grapes are perfectly ripe.
Vinification is achieved by a gentle destemming with a soft pressing of the grapes.
Temperature-controlled red fermentation takes place with contact of the skins for at least 10 days.
Aged in steel tanks for 5 months and then 18 months in wooden barrels.
