IDEAL PAIRED WITH
Tajarin with meat sauce, roasted white and red meat, grilled meat, game, aged cheeses.

The vineyard is grassed in alternate rows with green manure legumes until June.
Harvesting is done by hand in mid/late September when the grapes are perfectly ripe.
Vinification is achieved by a gentle destemming with a soft pressing of the berries.
Temperature-controlled red fermentation.
Aged in steel tanks for 10 months, then in bottles for 10 months.
