When to Consume
Immediately, it is ideal to be drunk without aging.

Dry pastries or fruit tarts or other baked goods.

Harvesting takes place in early September and is done by hand, to select grapes that are ripe, but with the right acidity balance.
Vinification is achieved by a soft pressing of the grapes.
After removing all impurities, it is left to rest in temperature-controlled tanks.
Fermentation is temperature-controlled white fermentation.
